I’m a total beginner when it comes to stuff like this and I just wanted to make sure if I can use this cable or not with my OSSC 1.6. I have previously bought this SCART from ebay: https://www.ebay.co.uk/itm/Super-Nintendo-stereo-RGB-SCART-lead-SNES-CSYNC-FULL-SHIELD-GROUNDED-cable/201284360714

Would using this scart potentially damage the OSSC?

If you have an NTSC SNES, then yes the cable is fine.

Yep, I’m using an RGB modded US SNES mini and an AV famicom with the NESRGB board.

While it (probably) wouldn’t damage your OSSC anyway, you could always ask the seller if they provide the required components for proper 75ohm CSYNC in that cable, unless these components were added to your RGB mod anyway.

Product description states that it is 75 ohm attenuated, so you cannot damage your equipment.

                Ah, jolly good then.
