We’d recommend at least an RGB mod for your N64, you could always pick up a cheap second console if you don’t want to modify your original, though it requires no cosmetic changes.
For S-Video, the Sony YR-1000 and YR-3000 transcoders are confirmed working if you can find one on eBay.
