PAL 60hz colours are bad via the RetroTink 2x

Those screenshots look suspiciously like a YPbPr picture with the Pr (red) cable disconnected. Does the picture look exactly the same with the red cable unplugged? If only the Pb (blue) cable is unplugged, is the picture in greyscale?
This might be a workaround for some people:
I used the HD-Retrovision RGB to Component Cables for the SNES/N64/GCube on my PAL-GameCube over the Retrotink-2X and the colors looked fine as far as I can tell:
