No way to disable video output without valid input as far as I can see. It would be possible to set the default mode to S-video with a different firmware flash. There’s a programming port if you have a Microchip programmer (MPLAB ICD or PICKIT) and the TAG connect cable.
Haven’t seen a decent HDMI to RGBS converter. That might be on my to-do list one day!
